  FRENCH 
ONION SOUP

 

Onion soup!   It's simple, its delicious and its certainly best made the French way.  

 

Ingredients

 

3 Onions 

1 Litre of stock (make with water and 2 beef cubes)

25g of beef dripping or lard

4 slices of bread cut thick from a French loaf

100g of Cheddar Cheese (mild)

Pepper and salt to taste

Slice onions thinly

 

Melt lard in a saucepan and fry onions until brown and mushy

 

Remove pan from heat, add beef stock, season with salt and pepper and cook gently for 15 minutes.

 

As soup is cooking grate cheese and slice bread. 
Toast and butter it then sprinkle with grated cheese.

 

Put one slice in each bowl and ladle the soup over them
